Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In GE upright freezer, bags of raw chicken bones above containers of chopped roasted pork. Manager rearranged freezer for proper separation.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In steam table, wonton soup (125F - Hot Holding); steamed wontons (103F - Hot Holding). Per manager soup in line 2 hours and wontons less than 30 minutes. Both returned to stove to reheat and temperature increased on steam well.
