Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside top of refrigerated make-table at cookline: shredded cabbage (45F - Cold Holding). The cabbage is filled approximately four inches above the fill line inside top of unit. Manager stated the cabbage was placed inside unit approximately 30 minutes prior. Inspector had employee remove excess cabbage and place it into the walk-in cooler to cool to 41F.
