Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Items in reach-in cooler across from cook line: cabbage (45F - Cold Holding); noodles (46F - Cold Holding). Manager stated items placed in cooler two hours prior to temperature being taken and door to cooler was open for a long period of time. Manager placed items in reach-in freezer to reduce temperature to 41F. Manager stated going forward items would be placed in deeper pans to sit deeper in cooler.
