Ten pounds of fried chicken held on time control with all four-hour daypart times listed on the tracking board. Operator unsure which times coincided with chicken on the table. The 11-3 daypart was still listed on the board and it was 3:18 pm. Chicken was discarded. See stop sale.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Walk-in cooler: shrimp (45F - Cold Holding); pork (45F - Cold Holding); beef (45F - Cold Holding). Ambient temperature was 50F. Operator stated door had been left open for cleaning. Educated Operator on keeping door closed to protect food. Door closed and checked 30 minutes later and ambient temperature had dropped to 43F.
