Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed quad sanitizer bucket next to handwashing sink at the rear across from three compartment sink at 0ppm. Staff replaced the bucket, tested at 100 ppm.

Wet mop not stored in a manner to allow the mop to dry. Observed mop stored in mop sink. Manager stored mop to dry.
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth stored on self near prep table not in sanitizer solution. Manager removed wiping cloth and stored it in sanitizer bucket.
