Employee went from preparing food to handling sanitizer bucket to take to dish area, returned to cook line and continued preparing food without washing hands. Discussed with employee who then washed hands

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. After 3 attempts Dishwasher (Chlorine 0ppm) - operator to contact technician.
