Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In to-go hot holding table, tofu sofritas (121F - Hot Holding); cooked brown rice (131F - Hot Holding); cooked white rice (129F - Hot Holding); for approximately 1 hour per operator. Operator stirred foods to reach above 150F.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Operator is engaging in ambient cooling of cheese in walk-in cooler after prep, with plastic covers on containers.
Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained. Observed approximately twenty non-original, photocopied Food-handler certificates.
Single-service articles not stored inverted or protected from contamination. Multiple single service lids, containers in back dry storage area not inverted or protected. Operator inverted.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer Bucket (Quaternary 75ppm), 2 in front one in back of kitchen. Operator switched out buckets, new concentration 150ppm.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In walk-in cooler 2 containers cut tomatoes salsa (55F - Cold Holding) for 3 and a half hours per operator, per operator walk-in cooler door was opened constantly for 2-3 hours to unpack order per operator. Operator began icing down all foods.
Time/temperature control for safety food removed from cold holding for necessary preparation rose above 41 degrees Fahrenheit during the preparation process and rate of cooling is insufficient to cool back to 41F within 4 hours. In walk-in cooler, all ambient cooling:; cooked beef (54F - Cooling); cooked chicken (55F - Cooling); cooked beans (51F - Cooling); sour cream (54F - Cold Holding); white soft cheese (55F - Cooling) per operator for 3 and a half hours since morning unpacking and prep. Per operator walk-in cooler door was opened constantly for 2-3 hours to unpack and prep during this time. Operator began icing down all foods for rapid cooling.

In online order steam well at front:; cooked beef (115F - Hot Holding); tofu (122F - Hot Holding) for one hour per operator. Operator returned items to stove for reheating, in 10 minutes reheated to 188F.
Handwash sink not accessible for employee use at all times. Far end cook line handwash sink blocked with trash can. Operator cleared sink for use.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Back of soda machine behind nozzles soiled with mold like substance.
Nothing was found. The inspector recorded no violations at all.
