Time/temperature control for safety food prepared from/mixed with ingredient(s) at ambient temperature not cooled to 41 degrees Fahrenheit within 4 hours. Observed cut lettuce stored inside the walk in cooler at 48F. As per employee since 10am. Employee placed cut lettuce in smaller container and moved to another cooler. Took second temperature and it reach to 41F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.Observed cooked steak stored inside a hot holding unit 127F, manager asked employee to reheated on the grill.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed quaternary ammonium sanitizer solution at 150 ppm at front counter. Employee replenished solution. Final reading 200 ppm.
