Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. After ran dish machine and employee removed washed food containers from dish machine, tested 0ppm. Manager reset dish machine, manually prime sanitizer, re-ran dish machine multiple times, re-tested 0ppm. Operator set up three-compartments sink for manually wash, rinse and sanitize food contact surfaces, and placed work order with dish machine service technician.

Observed employee cooked cornbread with gloves, corrected action taken, inspector discussed with employee proper glove usage on ready to eat foods.
