Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Cooked chicken spicy (130F hot holding, RETEMP 202F) cooked chicken (128F hot holding RETEMP 202F) operator removed chicken from warmer and reheated to above 165Fin oven. Operator turned heat up on warmer for proper hot holding temperature.
