Evidence of mop/cleaning wastewater dumped onto ground. Observed signs of mop, water being dumped outside upon checking with employee, employee stated that is where they dump them up water as mop sink is blocked and full of miscellaneous items.
Food with mold-like growth. See stop sale. Observed open container of ricotta cheese not properly date marked with mold-like substance growing in it. Operator voluntarily disposed of all above items.

Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed raw open tub of ricotta cheese in reach-in cooler employee stated the commercial items listed above had been opened more than 24 hours prior.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink. Observed an establishment is using ammonia base sanitizer, but currently has chlorine based test strips.
Proof of required state approved employee training not available for some employees. Observed employee on duty Ellie Solovyev employed more then 60 days.
