Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed two Mahi-Mahi filets with an internal temperature of 35° F. still in the vacuum. The owner cut the corners of the vacuum bags.
In-use wet wiping cloth/towel used under cutting board. The cook removed the towels.
