Observed Alfredo Sauce (51F - Cold Holding); Dairy Base Sauce with Spinach (51F - Cold Holding); Dairy Base Sauce - Zesty Sauce (51F - Cold Holding); Pork Mix Sauce (51F - Cold Holding); Sausage (51F - Cold Holding); Shredded Cheese (51F - Cold Holding); Chicken Wings (51F - Cold Holding) in pizza reach-in cooler near pizza ovens. Operator started moving items to walk-in cooler for rapid cooling.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed base of ice chute exterior and soda dispensing area behind nozzle areas soiled with accumulation of a mold-like substance.

Employee emptied strainer with food waste in three compartment sink, then began to unload clean dishes from machine with no hand wash. Discussed proper hand washing with operator, employee rewashed dishes. Used Spanish translator app to properly communicate with dish employee
