Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee loaded dirty dished onto dish rack then began to put away clean pans from the dishwasher without washing hands first. Manager spoke with employee on proper handwashing.

Employee washed hands with no soap. While inspecting women's restroom, employee used the restroom and washed hands with no soap. Inspector asked employee to wash hands and use soap. Employee washed hands again with no soap. Manager then came to restroom area and asked employee to wash hands with soap. Employee used the soap.

Observed employee bring pizza pan to the dish room, washed the pan with a scrub brush and soap, rinsed the pan and then took a towel hanging on the shelf by the dishmachine and dried the pan and brought the pan out front and placed in stack of clean pizza pans. Inspector notified manager, employee returned pan to the dish room for sanitizing.
