Deli cooler in kitchen - chicken wings (53F - Cold Holding); blue cheese (57F - Cold Holding); cut lettuce (56F - Cold Holding); cooked chick peas (55F - Cold Holding). Ambient temp reading 57F, per manager all items in temp prior to business opening. All items moved to freezer. Retemp - all items between 48F and 54F

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Sanitizer empty, operator switched out sanitizer.
