Person in charge states unit was in temperature approximately 2 hours ago. In salad prep cheese, sprouts, cut lettuce held on ice as unit is at 55F ambient at 48-52F. Will hold on time until unit can be serviced. In sandwich prep across from salad prep cheese, cheese stored above fill line at 46-48F. Discussed possibility of holding on time.
