Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed bleu cheese crumbles, sliced Swiss cheese, shredded cheese blend, house made ranch dressing, cut lettuce (45F-50F - Cold Holding) in top of flip top reach-in cooler across from hand wash sink at cook line. Operator stated employee left lids open during rush. Observed thermostat on exterior of reach-in cooler at 34F. Operator closed lids a couple of times during this inspection and stated he will call to have serviced.
Toxic substance/chemical improperly stored. Observed spray bottle containing toxic substance stored next to single use deli paper on shelf across from grill and another bottle with same contents on shelf in prep area next to single use to go containers. Operator removed both spray bottles of sanitizer to properly store.
