Stored food not covered. Raw shrimp, raw grouper and cooked chicken wings stored in reach in cooler on front line not covered. Employee covered food with lids.

Frozen time/temperature control for safety food being slacked at room temperature is no longer frozen solid. Thawing- beef 67F (12:00-12:45). Employee placed beef in walk in cooler.
Soiled dry wiping cloth in use on make line at cutting boards. Employee removed cloths from cutting boards and sanitized area.
