Reach-in cooler interior/shelves have accumulation of soil residues. Upon inspection observed walk-in cooler shelves rusted.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Chlorine 0 ppm ( upon repeated cycles ) Sanitizer station set up during the inspection 100 ppm chlorine.
