At this rate of cooling it will not reach 135 f to 70 f within 2 hours and 135 f to 41 f or colder within total of 6 hours. seafood salad 48 f as per chef ambient cooling 30 minutes. Second temperature 48 f after 20 minutes in upright cooler. Explained to poke holes in the plastic film or leave it uncovered while cooling. At this rate of cooling it will not reach 41 f within 4 hours from the time food was removed from the controlled temperature.
