Establishment uses reduced oxygen method to vacuum seal raw food items, then stored in reach in freezer, observed production time not written on packaged food items.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed and tested quaternary sanitizer at 0ppm. As per employee, quaternary sanitizer finished. Directed to use chlorine until quaternary sanitizer could be provided, tested chlorine at 100ppm.
