Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cream cheese (50F - Cold Holding); in reach-in cooler sandwich making station. Person in charge ststed he had it out during lunch when making a sandwich and forgot it was out. Person in charge stated he will keep in cooler until it's chilled. Also, shredded mozzarella cheese (46F - Cold Holding) in top of flip top reach-in cooler next to triple sink. Person in charge stated it went in cooler at lunch time. Operator closed lid to chill cheese.
Employee washed hands in a sink other than an approved handwash sink. Employee washed hands in serice sink and also in triple sink. Discussed with employee that hands can only be washed in hand wash sinks only.
