Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. 1. Observed Beans (127F - Hot Holding) at the steam table in the kitchen. Prepared less than two hours ago per operator. 2. Observed Rice (89F - Hot Holding), under no temperature control on counter in kitchen. Cooked less than two hours ago per operator.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Operator currently packaging raw and raw beef without an approved HACCP.

Raw animal food stored over/not properly separated from ready-to-eat food. Observed tray of raw shell eggs stored on shelf above container of cooked mashed potatoes in single door reach in cooler in kitchen.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Rice (71F - Hot Holding) and beans (83F - Hot Holding) cooked less than three hours ago per operator, stored on counter top under no temperature control. Operator placed foods on stove top to reheat to 165F.
Light not functioning. Observed two lights not functioning in the dry storage area.
Met inspection standards. 5 violations recorded, none serious enough to require a return visit.
