Two employees hired more than 60 days missing proof of employee food safety training. Person in charge thought they had 90 days to complete the training.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer Bucket (Quaternary 150ppm) in prep area. Operator changed out bucket of sanitizer and retested at 200PPM.

Cove molding at floor/wall juncture broken/missing. Cove molding at floor near warewashing area in disrepair. Operator sent email to maintenance to have repaired.
