Unit has no ambient thermometer but has torn gaskets. Inspector ambient thermometer reading at 64F. Employee place ice on all products. raw bacon (74F - Cold Holding)m stored on speed rack next to ice machine in kitchen area and place there approximately 30 mins ago from walk in cooler to be later cooked as per manager. Manager having employee to put in cooler
