Operator stated it was out for approximately 1hr and gets disposed of at the end of breakfast. Reviewed and emailed time as a public health control.

In-use knife/knives stored in cracks between pieces of equipment. Observed 2 knives in the crack between single door make station and food preparation table on cook line. Operator removed knives.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee wearing gloves handling raw fish. Employee placed fish into fryer. After placing fish into fryer employee removed gloves and began to put on a new pair of gloves. Advised employee hands need to be washed in between tasks and before putting on new gloves. Employee washed hands and put on new gloves.
Non-food grade paper/paper towel used as liner for food container. Observed paper towel at the bottom of container holding cut leafy greens in roll top cooler at prep station. Operator removed paper towel.
