Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed pork (112F - Hot Holding); chicken (79F - hot Holding) in kitchen. Per operator, both items cooked 1 hour prior to the inspection. Operator reheat items to 170-178F.
Handwash sink not accessible for employee use at all times. Observed hand washing sink block with chair in kitchen. Operator relocate chair.
No chlorine chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
