Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. -open box of raw turkey sausage above package of croissants in reach-in freezer. Croissants moved to top shelf above raw foods.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. -splitter at mop sink does not have a vacuum breaker on open end of splitter.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. -deli meats in reach-in cooler have date mark of 12/28. Per person in charge, product has been frozen, removed for event. All TCS, ready to eat products have a 7 day refrigerated shelf life.

Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. -rice cooling in covered pan on counter in kitchen approx 2 hours 80-82°f. Product immediately moved to freezer to reach 70°f.
Raw animal food stored over/not properly separated from ready-to-eat food. -cases of raw chicken above case of pasteurized liquid eggs in walk-in cooler. Operator relocated.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -ground beef 80°f less than 4 hours. Product well above 41°f after thawing. Product moved to walk-in cooler for temperature recovery.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. -grease and dust build up on hood filters. Hood cleaning scheduled this week. Recommend removing filters and cleaning more frequently.
Time/temperature control for safety food thawed in an improper manner. -ground beef in standing water in prep sink. Operator turned on water to correct but food 80°f.
