Handwash sink used for purposes other than handwashing. In the server prep area near the bar, observed employee wash cutting board at the handwashing sink. Discussed with person in charge handwashing sinks are for handwashing only.
Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. The dinner menu has a smoked salmon capriccio dish not marked properly indicating the consumer advisory. Operator began reprinting menu for proper labeling.

In walk-in cooler observed reduced oxygen packaging of salmon, and shrimp with no approved variance letter submitted.
