Discussed with operator handwashing sink are only for handwashing to prevent/reduce cross contamination. Operator removed all items from handwashing sink.
Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. In the menu there is a dish "ceviche" with raw seafood that is not marked indicating the consumer advisory. Operator stated dish is no longer being served and will be removed when new menus are printed.

In the stand alone reach in cold holding unit near the entrance of the kitchen area, observed rice and beans without a date mark. Operator stated foods were prepared two days prior to inspection. In the freezer next to the cook line, observed cooked pork without date mark, operator stated food was prepared three days prior to inspection. Discussed with operator proper date marking.

In the right side stand alone cooler, observed raw chicken placed over raw pork and raw beef. Operator rearranged for proper storage. Provided operator with DBPR safe refrigerator storage.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. raw shelled eggs (62F - Cold Holding) operated stated raw shelled eggs had been out of refrigeration for 40 minutes. Educated operator on time as a public health control. Operator began filling out time as a public health control form.
Handwash sink not accessible for employee use at all times. The handwashing sink next to the cook top was being blocked with two step ladders. Operator removed step ladder to allow access to the handwashing sink.
