Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed : the 3 compartment sink quaternary ammonia ppm indicated 100 ppm. The tablets were not yet crushed/dissolved while sanitizing the dishes was in progress. The tablets were crushed and mixed, giving a reading of 250 ppm. The dishes were then placed in the sanitizer for 30 seconds..
Cosmetics/toiletries stored with food, clean equipment and utensils, clean linens or single-service items. Observed : a bottle of perfume stored over guest food in the dry goods corner. This was moved below.
