Watched dishwasher drink from an open top beverage and then handled clean dishes clean dishes in warewashing area. Educated operator on proper handwashing. Employee washed hands and changed gloves.
Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Raw whole shell eggs stored on cook line flip top cooler at room temperature for less than two hours. Operator placed eggs back into reach in cooler to chill. Informed operator about using time as a public health control option for item.

Raw animal food stored over/not properly separated from ready-to-eat food. Raw cold smoked salmon stored over ready to eat ham in walk in cooler. Operator reorganized.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection.At walk in cooler- Cooked potatoes 48-50F at 9:30 to 48-50F at 10:20 ( cooling since 7:30)- food covered and in large quantity- at current rate of cooling food will not reach 41F with remaining 3 hours- operator placed in walk in freezer to quick chill.
Exterior door has a gap at the threshold that opens to the outside.
