Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Sanitizer tested 0ppm at triple sink in kitchen. Solution discarded and refilled. New solution tested 200ppm.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pitchers of milk and cream at coffee bar 50F. Pitchers placed on bar approximately 60 minutes prior. Pitchers moved to walk in cooler to cool.
