Observed dish machine not sanitizing properly. Informed operator how to set up three compartment sink until dish machine is functioning properly.

Old labels stuck to food containers after cleaning. Observed old labels on dishes on wash rack.
Reach-in cooler interior/shelves have accumulation of mold like substance on door gaskets.
