Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter cups front line counter at 77F. Employee state butter was removed from reach-in cooler 3 hours prior. Observed employee return butter to reach-in cooler to cool to proper temperature. Instructed operator on proper temperature holding and Email operater Time as a Control sheet for further use.
