Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Upon inspection observed operator cooling mash potatoes in deep pans. Educated and provided operator with cooling handout sheet. Operator proceeded to put mashed potatoes in shallow pans for proper cooling.
Equipment in poor repair. Upon inspection observed cook line hood system rusted and corroded in the kitchen.
Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. Upon inspection observed unsealed concrete floor in walk-in cooler.
