Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the front make table: Butter (60F - Cold Holding); Sliced cheese (60F - Cold Holding); Sliced tomatoes (60F - Cold Holding). Operator stated it had been there for approximately 1hr. Operator placed more ice there. Observed in the standing reach in cooler in the kitchen: Ambient shell eggs (57F - Cold Holding). Operator stated it had been out for approximately 1hr. Operator moved eggs to a reach in cooler. Observed in the walk in cooler: Sliced cheese (45F - Cold Holding); Pork (45F - Cold Holding) Operator stated it had been out to slice earlier.
Handwash sink used for purposes other than handwashing. Observed the bar hand wash sink used to fill glasses. Instructed operator on proper use.
