Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed green beans 101F at 2:00, cooked and cooling since 1:00, down to 89F at 2:45. Green beans cooling in covered, stacked bins in walk in cooler. Manager opened lids, separated bins, and stored in walk in freezer to properly cool during inspection.
