Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked pork (90-F-113F - Hot Holding) in food warmer across from front counter. Observed cooked pork piled high above the food warmer. Employee removed stacked up pork and placed in hot box in back to get reheated. Rechecked at end of inspection and cooked pork 167F
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Quaternary 500+ppm) at front counter area. Operator remade the quaternary solution and retested at 200PPM
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Scoop for popcorn stored on top of popcorn with handle touching popcorn. Employee removed popcorn scoop to properly store.
