Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Time mark missing from numerous foods using TPHC. Written procedures incomplete. TPHC paperwork has box checked for specific time but missing specific times listed on paperwork. Also, paperwork missing signature. Operator stated he will get paperwork corrected.
