Employee washed and rinsed multiple utensils without sanitizing utensils for a minimum of 30 seconds using quaternary ammonium solution. Discussed with employee, employee rewashed, rinsed and sanitized utensils.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cooked pork, coleslaw, macaroni and cheese, cooked ground beef (47F-49F - Cold Holding) in walk-in-cooler. Person in charge stated items of speed rack were placed in walk-in-cooler around 8:30a. Person in charge stated the employees have been in and out of cooler a lot this morning. Employee rolled cart into another walk-in-cooler in near establishment to chill. Retemped at end of inspections and temped foods at 38F-41F
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked turkey (114F - Hot Holding) in food warmer drawer at closed end of kitchen. Person in charge realized food warmer not plugged in. Stated turkey has been in warmer for approximately 15-20 min. Person in charge placed turkey in nearby other food warmer box to reheat to 165F.
No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Time as a Public Health Control used for brisket sandwiches. Unable to locate paperwork. Log on cooler door not filled in. Person in charge filled in Time as a Public Health Control info for the brisket sandwiches that were prepared 20 minutes prior.
