Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed sanitizer bucket not strong enough. The manager had sanitizer bucket switched out to proper strength.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed cook changing gloves without washing hands. Educated cook on proper procedures upon changing gloves when changing assignments. Observed cook washing hands after we discussed procedures.
