Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In top of reach in cooler on cook line, sliced cheese (46F - Cold Holding). Manager stated employee turned cooler on after stocking cooler and lids were open. Manager shut lids to help keep cold air in cooler.

Manager stated both steam tables were not turned up high enough. Manager turned both to full power and rechecked food items multiple times.
