Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine tested at 10ppm chlorine. Manager found the line was kinked. Dishmachine retested at 100ppm chlorine.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed fish (46F - Cold Holding); raw beef (52F - Cold Holding) in reach in coolers on cook line. Per manager, fish placed in reach in cooler from walk in cooler approximately two hours prior and raw beef placed in reach in cooler from walk in cooler approximately one hour prior. Both products observed above pan chill line. Both products moved to walk in freezer. Retemp approximately 30 minutes later: fish 35F and raw beef 39F.
Food-contact surface soiled with food debris, mold-like substance or slime. Three cutting boards on storage rack near rear exit have black staining.
