Hot time/temperature control for safety food received at less than 135 degrees Fahrenheit. Melted butter temp at 128F. Re Temp 30 mins later at 123F. Employee turned up temperature of unit and added hot water to increase temperatures per Manager's directive.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed debris on inside wall of machine.
