At grill area, beef burger 140F. Burger just completed cooking. Employee placed burger back on grill and reheated burger to 171F.
Raw animal food stored over/not properly separated from ready-to-eat food. In walk in cooler, pans of raw fish stored over ready to eat chicken. Items moved and stored correctly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach in cooler on cook line across from grill, butter 48F. Butter was left out on prep counter approximately 15 minutes. Butter moved to walk in cooler to cool. In line cooler next to grill, cooked chicken 50F, beef 51F. Items placed into service approximately 15 minutes prior. Items moved to walk in cooler to cool.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Vacuum breaker missing at the end of the splitter for mop sink faucet where black hose is attached. Maintenance person placed breaker in correct position.
Handwash sink used for purposes other than handwashing. Manager dumped employee drink in hand washing sink by drive through. Inspector explained proper hand washing sink procedures.
Probe thermometer not used to ensure proper food temperatures of cooked time/temperature control for safety food. No probe thermometer in range to check proper cooking temperatures as evidence by improper temperature of cooked beef burger. Thermometer retrieved and placed within range.
Clean wiping cloth supply not properly stored. Large white sanitizer bucket stored directly on floor in prep area. Bucket placed inside another bucket. Red sanitizer bucket stored on prep area next to single use items in drive through area. Bucket moved and stored correctly.
