Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at 0ppm chlorine. Person in charge primed machine, retested machine at 100ppm and reran food contact containers.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed food contact containers ran through dish machine while machine was at 0ppm chlorine. Person in charge primed machine, retested machine at 100ppm and reran food contact containers.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed by back door a hose Bibb with black hose connected missing vacuum breaker.
Old labels stuck to food containers after cleaning. Observed old labels stuck to food containers on drying and storage racks. Person in charge is addressing labels by purchasing new bran that is easier to remove.
