Time/temperature control for safety, commercially processed food reheating for hot holding not heated to a minimum temperature of 135 degrees Fahrenheit in all parts. Observed chili at 11:35 (93F - Reheating) in the bain marie in the kitchen. A time mark shows a prep time exceeding 2 hours prior to temperature operator increased the heat for the holding unit. Observed chili at 11:55 (154 - Hot Holding).

Observed sliced cheese (51F - Cold Holding) stored stacked above the fill line in the top section of the reach in cooler on the cook line. The operator stated the cheese has been held for approximately 1.5 hours. The operator emptied half of the contents and stored in the lower portion of the reach in cooler.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed the quaternary solution for the sanitizer bucket behind the front counter at 0ppm. The operator discarded and refilled with a solution at 200ppm.
