Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the left side reach in cooler on the line: Sliced tomatoes (51F - Cold Holding); Chopped lettuce (51F - Cold Holding); Cheese (51F - Cold Holding); Ambient (47F - Cold Holding). Operator stated it had been setup approximately 3hrs ago. Operator moved the food to a different cooler and called a company.
Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Observed the tags sorted by month but not day.

Bowl or other container with no handle used to dispense food. Observed containers with no handle in multiple products. Operator removed all containers for proper storage.

Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed meats, cooked products vacuum sealed with no Haccp plan available.
