Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At prep table; cooked peas (111F - Cooling 2:25/109F 2:45); cooked chicken (109F - Cooling 2:25/109F 2:45). Operator stated cooling for 1 hour in covered pots at room temperature on prep table, at this rate will not reach 70F within 2 hours, uncovered and moved to reach in freezer to facilitate faster cooling.

No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Operator provided chlorine.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again.
